Oven Roasted Chicken and Potatoes


A timeless classic, whole roast chicken is a delicious meal to put out for the family, or guests. We like to use an enamel dutch oven, but a roasting pan works as well.


Ingredients

  • Whole chicken ( ours are usually between 4 and 6 pounds )

  • 5 to 6 red or yellow potatoes

  • 1/2 Lemon

  • 3 cloves garlic

  • 1/2 stick butter

  • Rosemary, Parsley, Basil, Parmesan Cheese to taste

Directions

Preheat oven to 400 degrees. Blend herbs into softened butter. Stuff chicken with lemon and garlic. Wash, and dice potatoes fill dutch oven with potatoes. Place chicken on potatoes. Cover chicken with butter and herb mixture. Cover and bake until chicken reaches internal temperature of 165 degrees. Sprinkle cheese on top of chicken, and serve.
